Chicken Tortilla Soup with Black Beans

INGREDIENTS
2 cups cooked chicken (I grill mine with fajitta seasoning to add more flavor)
1 small onion (I like red, but any will do)
1 small bunch cilantro (about 1/4 cup..sometimes I add a little more)
2 small red peppers
2 large carrots, grated
1 can black beans, rinsed and drained
Sour cream (optional)
Cheddar-Monterey Jack Cheese Blend (optional)
6 cups of Chicken Stock

Corn tortillas cut into strips
Oil for frying

DIRECTIONS
Add about 2 cups of the chicken stock to a large saucepan and heat to med.
Add the grated carrots to the stock.
Puree the cilantro, onion, and red peppers in a food processor and add to the stock and add remaining stock.
Simmer for about 10-15 minutes.
While simmering, heat up the oil in a deep pan and fry up the tortilla strips.
Add chicken.
Add black beanS.
Top with Sour Cream, cheese, and tortilla strips... also could add green onions, etc.

  1. .oops. I forget to mention that I add a pinch of salt, ceyenne pepper, and pepper before serving.

  2. When I made this I had forgotten to pick up the cilantro... that is the reason you don't see it in the photographs. :(
