Pistachio Banana Bread



2 1/2 cups flour
1 1/2 cups sugar
1/2 tsp salt
1/2 tsp soda
1 tsp vanilla
2 pkgs instant pistachio pudding
1 cup oil
2 cups mashed ripe bananas
5 eggs

Mix dry ingredients together. Add oil, bananas, and eggs. Mix well. Cut waxed paper to fit bottoms of 2 loaf pans, and grease sides. Pour dough into prepared loaf pans. Bake at 350 F (375 F for high altitude) for 50 - 60 minutes.

Makes 2 loaves.
