Chicken Haystacks

INGREDIENTS
Gravy:
2 cans cream of chicken soup
2 cans chicken broth
3-4 boneless chicken breasts, cooked and shredded (I boil my chicken)

Hawaiian Haystacks Toppings:
pineapple tidbits
shredded coconut
diced mango
chopped celery
sliced yellow or green pepper
sliced water chestnuts
chow mein noodles
cashew halves

Mexican Haystack Toppings:
diced tomatoes
sliced green onions
kidney beans, rinsed and drained
black beans, rinsed and drained
sliced olives
tortilla chips, crushed
shredded cheese
guacamole
sour cream

DIRECTIONS

1. Start your rice and set aside.

2. Gravy: Combine cream of chicken soup and chicken broth in a medium sauce pan. Whisk together and bring to a boil over medium high heat. Add shredded chicken. Heat through. Season to taste. Suggestions: salt and pepper or a little SeasonAll.

3. Now that your rice and chicken gravy are completed... it's time to build your haystacks! Simply start with a scoop of rice, a ladle full of chicken gravy and pile on the toppings of your choice.
