Jeanne's Gingerbread Waffles

1/4 cup vegetable oil
1/4 cup sugar
1 egg, beaten
1/2 cup molasses
1 1/4 cups whole wheat flour
1/4 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 cup hot water
Mix all together. Bake about 2 minutes on hot, well-greased waffle iron. Serve with *sliced peaches and whipped or ice cream for a special breakfast or dessert. Makes 2 waffles, about 10" x 10" each.
"Our family favorite for special occasions, or just because it is peach season. I freeze sliced peaches so we can serve them year-round. I usually triple the recipe so we can eat them for more than one meal."
