Zucchini Bread with Cream Cheese Icing

2 eggs
1 C. oil
2 C. sugar
2 C. grated zucchini
2 T. vanilla
2 C. flour
2 t. cinnamon
1/2 t. baking powder
2 t. baking soda
1 t. salt
1 C. chopped walnuts, optional
Beat eggs, oil and sugar, Add zucchini and vanilla. Beat well. Add dry ingredients. Beat well. Pour into a greased 9X13” pan. Bake at 325 degrees for 20 minutes. Turn oven up to 350 degrees and bake 25 minutes more or until done. Cool. Frost with Cream Cheese Icing (recipe below).
Cream Cheese Icing
2 C. powdered sugar
¼ C. butter
1 t. vanilla
12 oz. cream cheese
Beat together.
