Deluxe Chicken Breasts

I started organizing a few cupboards and came across this recipe. Until today, I hadn't made this in quite awhile. I originally found it about 15 years ago, when I was just a newlywed. I used to make it quite often and honestly thought, at the time, that it was gourmet. :) Though it may not actually be gourmet, it is however, quite easy to make and tasty.

INGREDIENTS
Chicken:
1/2 cup flour
1/4 cup dry bread crumbs
2 egg whites, lightly beaten
2 Tbsp water
4 skinless, boneless chicken breast halves
2 Tbsp canola oil

Sauce:
2 Tbsp butter
1 Tbsp flour
1 cup milk (I use skim milk)
1/2 cup cheddar cheese
optional: paprika for garnish

DIRECTIONS
Preheat oven to 35o F.

Chicken:
Combine the flour and bread crumbs in a shallow bowl, set aside. In another shallow bowl, whisk together egg whites and water. Dip chicken in egg white mixture, then dredge in bread crumb mixture, turning to coat. In a large skillet, heat canola oil over medium-high heat. Add chicken; cook until browned, about 5 minutes each side. Place chicken in a lightly greased 9x11 baking dish. Bake for 15 minutes, until baked through.

Sauce:
Melt butter in saucepan, over medium-high heat. Add flour and mix until well blended. Slowly add milk and stir constantly until sauce thickens. Remove from heat and add 1/4 cup cheese. Stir until mixed well. Serve over chicken, top with additional cheese.
