Albacore Casserole
CUBED ALBACORE INGREDIENTS
large chunk albacore, frozen
olive oil
garlic
salt and pepper to taste
DIRECTIONS
Place the fish in a large baking dish, and cover with olive oil, fresh pressed garlic and season with salt and pepper. Bake at 350 degrees until done. If you prefer you may grill the fish instead (Don't cook too long or the meat will become tough).
Once the fish is done, let it cool and then cut into 1" cubes.

CASSEROLE INGREDIENTS
1 onion, chopped

1 bell pepper, chopped
1 tomato, chopped
1 bunch cilantro, chopped fine
1 bag shell shaped pasta (precook until only half done)
hot sauce to taste
1 can black beans, well rinsed
1 tsp. oregano
4 or 5 cloves fresh garlic
1 lb. Monterey Jack cheese, cut into large chunks
DIRECTIONS
Preheat oven to 350 degrees. Pour some olive oil in a large frying pan or wok. Press garlic into pan, add chopped onion. Cook at medium to high heat until onions start to turn clear. Add remaining ingredients. Stir and heat for additional two minutes. Pour into baking dish with cubed albacore (see above) and then cover with foil and bake for 30 mins or until done.
Serve with browned 10" flour or whole wheat tortillas rolled.
