Easy Chicken Enchiladas

4-6 cooked chicken breasts (sliced in strips or shredded)
Shredded cheddar cheese
1 Pkg uncooked flour tortillas

Sauce Ingredients
1 pkg chopped frozen spinach
1 can green enchilada sauce
1/2 cup sour cream
1/4 cup cream
1 tsp minced dried onion
**Combine all in a blender, and blend it up!

Cook Flour tortillas in a frying pan, Place chicken inside tortilla, sprinkle cheese, spoon sauce over the chicken and roll up like a burrito. Continue until your casserole dish is full.
Spoon sauce over the Chicken enchiladas and sprinkle with cheese. Bake @350 for about 15 min.
Serve with shredded lettuce, tomatoes, olives and sour cream.

My family really likes this one.. I haven't told them yet, that they are eating spinach... it's our little secret K?
